Although... what does it matter when the perfect time to eat a cake is, a piece of cake is delicious at any time!

This easy recipe to make a Lemon Sponge Cake is suitable for people with dairy intolerances since it does not contain any dairy products. Of course, make sure the margarine is from vegetable sources since there are margarines with dairy products. You don't want to go through a scare if you are going to serve this cake to someone who is intolerant or allergic.

The trick to make the cake so fluffy

Who doesn't love Fluffy Cakes? At the moment I haven't met anyone... To make this cake so fluffy there are three very easy tricks to follow. I share them with you below.

For this cake to be so fluffy, mix the eggs, margarine and sugar well with a hand mixer. This mixture will be very airy, then add the other ingredients, mixing them in one by one with the mixer. Another important point is to sift the flour so that there are no lumps. The last trick is to have all the ingredients at room temperature.

Ingredients needed to make a Fluffy Lemon Cake

Since lemons have different sizes, and I have used some very small lemons from our garden, I´ve put the measurement in milliliters. Below I share everything I have used:

Ingredients needed to make a Fluffy Lemon Cake

  • All-purpose flour: I have used 200 grams of all-purpose flour
  • Sugar: 200 grams of white sugar to sweeten the cake
  • Margarine: I have used 50 grams of vegetable margarine at room temperature
  • Eggs: 3 size L eggs at room temperature
  • Sunflower oil: 125 milliliters of sunflower oil (1/2 cup)
  • Vanilla sugar: a bag of vanilla sugar (8 grams)
  • Lemon juice: about 50 milliliters of freshly squeezed lemon juice
  • Baking powder: a bag of baking powder (10 grams)
  • Salt: add a pinch of salt for more flavor

Ingredients you need to make the Lemon Cake Icing

If you have never made an icing it may seem difficult, although it´s quite the opposite. Making icing is one of the simplest things! The trick is to add the water very little by little so that it does not become too liquid.

There are different types of icing, for me the easiest and quickest to prepare is this glaze made from powdered sugar and water (instead of making a glaze with water you can make it with milk in the same way). You can also make frosting with powdered sugar and cream cheese.

To make the icing for the Lemon Cake you only need 3 ingredients:

  • Powdered sugar: you need 100 grams of powdered sugar
  • Water: you have to add very small amounts of water
  • Lemon zest: add a little lemon zest to the icing once you've made it for an extra lemon flavor

Kitchen utensils you need to make this Lemon Cake

Below I share the kitchen utensils you need to make this recipe:

  • Bowl: you need a medium/large bowl to mix the ingredients for the cake and another small bowl to make the icing
  • Hand mixer: use a hand mixer to mix the ingredients for this cake and obtain an airy dough to get that fluffy result that we all like so much
  • Cake pan: I have used a 26x11x7 rectangular cake pan, although you can use the any cake pan that you like best. Just keep in mind that baking time may vary. To check if the cake is done, prick it with a toothpick. If it comes out without any dough, it means that you can take it out of the oven
  • Silicone spatula: use a silicone spatula to remove all the batter from the bowl
  • Silicone brush: to apply the icing I have used a silicone brush, although you can do it just as well with a spoon
  • Measuring and weighing utensils: to avoid making mistakes with the quantities, use a kitchen scale and other measuring utensils such as a measuring glass

How to make a Fluffy Lemon Cake with Icing

Follow this recipe step by step to get a delicious Fluffy Cake with Icing. I´m sure you will be surprised by the result of this recipe.

Preheat the oven to 160º.

In a bowl, add the margarine, eggs and sugar. Beat for a few minutes with a hand mixer, this step is very important to achieve a fluffy result. Then add the following ingredients one by one while beating with the mixer: sunflower oil, vanilla sugar, lemon juice, a pinch of salt, sifted flour and baking powder.

Trick so that the cake does not stick to the cake pan

How many times has it happened to you that your cake has stuck to a non-stick pan? It has happened to me more than once and I have a trick so that no cake gets stuck to the cake pan again without having to use baking paper.

Grease the mold with a little margarine, for me the easiest and quickest thing is to use a piece of kitchen paper, pass it through the margarine and then grease the mold. Once greased, sprinkle with a little flour, you will see that it sticks to the margarine. You will never have problems removing a cake from the mold again.

Baking the cake

Use the method for greasing the mold previously explained and put the batter into the mold. To remove any air bubbles that may have remained inside the dough, tap the cake pan on the countertop a few times to remove them (take the cake pan, lift it a little and let it fall on the countertop several times to remove the air bubbles).

Bake at 160º for about 30-45 minutes. The time depends a lot on your oven, to know that it is done, prick it with a stick, if it comes out clean you can take it out of the oven because it will already be done. If there is batter stuck to the stick, leave it for a bit longer.

When you take it out of the oven, leave the cake for about 10 minutes in the baking pan on a cooling rack. After 10 minutes, remove it from the cake pan, run a knife around the edges and turn it over on the rack. Leave it as it comes out of the mold to cool down as you run the risk of breaking the cake if you turn it over while it is hot.

When the cake has cooled down you can turn it over and put the icing over it.

How to make icing for cakes

Making some icing is very easy. In a small bowl, put 100 grams of powdered sugar. Very little by little, add water, it has to be a little thick because if it is too liquid the cake will absorb everything and the icing will disappear. If you would like to, add a little bit of lemon zest, it will be delicious. You can also put the lemon zest on top of the glaze once you have put it on, it will look very pretty. 🙂 When you have made the icing, put it on top of the cake, don't worry if it falls over the sides because it will look beautiful.
