How to Make Algerian Sauce, Sauce Algérienne

Algerian Sauce, Sauce Algérienne is the most popular sauce in Algeria. It is a slightly spiced sauce, spicy but sweet at the same time. From now on, this sauce will accompany all your dishes such as fries, sandwiches, hamburgers, tacos and especially chicken. Algerian Sauce is delicious with anything, you'll see!

I always say that mayonnaise is the queen of sauces. The main ingredient to make this sauce is mayonnaise, it also has red onion, cilantro, harissa and spices. This makes the Algerian Sauce or Sauce Algérienne a level above of mayonnaise.

The good thing about this sauce is that it is prepared within just a few minutes. And best of all, when making it at home, you can adjust the spiciness of the sauce. If you love spicy you can add more harissa.

It's a sauce with chunks, I personally love it. But if you are not a big fan of chunky sauce, you can put the sauce through the blender and you will have a delicious Sauce Algérienne without any chunks.

What ingredients does Algerian Sauce have?

You are probably wondering what the Sauce Algérienne contains, the Algerian Sauce has few ingredients which I detail below.

  • Mayonnaise: mayonnaise is the star ingredient to make Algerian Sauce, you need 250 grams. You can make it at home (highly recommended) or you can use jarred mayonnaise. I leave you a short video here so you can see how easy it is to make your own mayonnaise, you will see that you will never buy it at the supermarket again
  • Onion: use half a red onion chopped very finely
  • Garlic: you need a clove of pressed garlic
  • Coriander: you need 5 sprigs of fresh cilantro chopped
  • Harissa: use a tablespoon of harissa for a mild spiciness, you can increase the amount if you like a spicy sauce
  • Concentrated tomato paste: you need 1 and a half tablespoons of tomato paste
  • Ground cumin: a teaspoon of ground cumin
  • Sweet paprika: half a teaspoon of sweet paprika
  • White sugar: add a teaspoon of sugar
  • Juice of half a lemon: add the juice of half a small lemon
  • Salt and pepper: add salt and pepper to taste

How to make Algerian Sauce at home

If you are going to make your own mayonnaise to make Sauce Algérienne, start with that. If not, skip the step of making homemade mayonnaise.

HOMEMADE MAYONNAISE: In the glass of the hand mixer, add the egg, salt to taste (about two pinches of salt), the lemon juice (1/4 teaspoon) and 150 ml of sunflower oil on top. Place the mixer resting on the bottom of the mixer glass and beat without moving it for a few seconds, then raise and lower the mixer until it reaches the consistency of mayonnaise. Once it has reached consistency, add the remaining oil little by little (100 ml), and raise and lower the mixer. Now you have delicious homemade mayonnaise, enjoy! here to watch the video (1 minute).

Then add all the ingredients to the mayonnaise except the lemon juice. Mix well and finally add the lemon juice.

As you will see, in a few minutes you have a delicious sauce to serve with your favorite dishes.

You can keep the sauce for about 3 days in the fridge.
