A Creamy Chicken recipe that you will repeat again and again

This is the first recipe of the year, and to celebrate it, I'm sharing the recipe that is the most loved at home. An easy recipe for chicken with mushrooms in a sauce that has a lot of cream so you can dip some homemade fries or bread into it, or accompany it with some rice.

When I say that it has a lot of cream, it means that it really has a lot of cream. It has a large amount of cooking cream and also sour cream.

Not only is it a dish that anyone will love, but it's also quick and easy to prepare. This recipe has it all!

Ingredients you need to make this recipe for Chicken with Mushrooms and Cream

Below, I share the ingredients have I used to make this extra creamy chicken with mushrooms recipe.

  • Chicken breast: you need one chicken breast, the one I used to make this recipe weighed about 400 grams, although you can add more or less chicken and the result will be the same. The chicken is cut into cubes of the size you prefer.
  • Mushrooms: you need 500 grams of mushrooms, I know it seems like a lot, but the mushrooms become small when you bake them. The mushrooms are cleaned and sliced
  • Butter: you need 100 grams of butter (50 grams + 50 grams)
  • Onion: a white onion diced
  • Garlic: two garlic cloves pressed
  • Concentrated tomato paste: you need 1 and a half tablespoons of tomato paste
  • Cooking cream: you need 400 milliliters of cooking cream
  • Sour cream: 200 milliliters of sour cream
  • Vegetable broth: you need a cube of vegetable broth
  • Water: 90 milliliters water
  • Salt and pepper: add salt and pepper to taste
  • Fresh parsley: garnish the plates with a little bit of chopped fresh parsley

How to make extra creamy Chicken with Mushrooms and Cream

In a pot or frying pan, heat 50 grams of butter and add the sliced mushrooms. Cook them over high heat for about 5-6 minutes or until they have got a dark color. Next add the chopped onion and lower the heat to medium heat, leave it for about 3 minutes and then add the pressed garlic. Leave it for about another minute and remove it from the heat.

In the same pot or frying pan, heat another 50 grams of butter and add the diced chicken breast, season lightly with salt and pepper. Brown it and add the reserved mushrooms. Also add the tomato concentrate, the vegetable broth cube (crumble it with your hands) and the water. Stir and leave it on medium heat for about 3 minutes.

Now it's time to give it a lot of creaminess! Add the cooking cream, put the lid on and leave it on low heat for about 10 minutes. Lastly, add the sour cream. Leave it for about 5 more minutes over low heat.

Serve it with some homemade french fries, rice, bread or mashed potatoes.

Tips to make this recipe extra delicious

There are some points to keep in mind to make this recipe a success.

  • Take your time to brown the mushrooms over high heat (without burning them), the more browned they are, the more flavor they will add to the sauce.
  • If you see that when browning the mushrooms and/or chicken the base of the frying pan or pot gets brown, this is good, because later when you add the water and cream this will come off and give flavor to the sauce.
  • When you add the sour cream, keep the heat low to prevent it from possibly curdling.
