Serving a Roasted Chicken is always a success, and even more so if you prepare it this way. My family can't believe how delicious this chicken tastes. I serve it with home made fries, which I put into the sauce (which is finger-licking good) so they absorb the flavor, and with a loaf of bread to make the most of the sauce.
What I like about making roasted chicken is that since it stays in the oven for a long time, the kitchen is clean when I serve the food. Its just gathering the ingredients, putting the chicken in the oven and checking on it from time to time.
This Roasted Chicken is juicy on the inside, crispy on the outside and full of flavor. You could make this recipe using chicken thighs instead of a whole chicken, but adjust the baking time, it probably doesn't need as much baking time.
How to make the best Roasted Chicken ever
Making Roasted Chicken can be challenging when you've never made it, but I assure you that if you make it once, you will make it again and again. Below I share what ingredients you need and the step by step to make this Roasted Chicken recipe.
Ingredients needed to make Roasted Chicken
- 1 whole chicken of approximately 1.5 kilos
Marinade step 1
- 1/3 cup sunflower oil
- 35 milliliters of lemon juice
- 1/2 cup of water
- 1 1/2 teaspoon sweet paprika
- 1/2 teaspoon hot paprika
- 1/4 teaspoon black pepper
- 1 teaspoon onion powder
- 1/2 teaspoon ras al hanout
- 1/2 teaspoon Provençal herbs
- 1/2 teaspoon of ground cumin
- 1 cube of vegetable broth
- 6 cloves garlic, coarsely chopped
- salt to taste, I usually add 1 teaspoon to 1 and a half teaspoons
Marinade step 2
- 1/3 cup olive oil
- 1 1/2 teaspoons mustard
- 1 tablespoon concentrated tomato paste
- 4 to 5 cups of water
How to make and bake chicken so that it is juicy on the inside and crispy on the outside
Open the chicken by cutting where the chicken breasts meet (you can see the video below). Add all the spices, the crumbled vegetable stock cube and the garlic. Make two cuts on each side of the chicken and insert a clove of garlic or a piece of garlic clove into each hole. Add the lemon juice, sunflower oil and water, massage the chicken well all over.
Prepare the marinade part 2, mix the olive oil, mustard and tomato concentrate. Put it on top of the chicken and massage it again. Add 4 to 5 cups of water.
Bake it at 190º degrees for 1 and a half hour. Cover the chicken with a piece of aluminum foil, put it only on top of the chicken, its not necessary to cover the entire tray. When this time has passed, remove the aluminum foil and leave it for another 20 minutes or until the skin is golden brown. Take it out of the oven and let it rest for about 10 minutes.
Serve it with French fries, bread and a salad.
