Easy Recipe: Chicken and Special Meatballs in Sauce

It has been very difficult for me to give this dish a name. I ended up calling it Chicken and Special Meatballs in Sauce, I think that's the closest to what it is. It's an extraordinary dish despite its simplicity. It consists of chicken and special meatballs in a homemade tomato sauce.

The special meatballs (which are more croquette-shaped than meatball-shaped) are made from minced meat and cauliflower. They are fried in oil, but despite that, they are not greasy at all (they must be fried in very hot oil so that they do not absorb too much oil). The “meatballs” are added to a very light and delicious tomato sauce. They will absorb the sauce and are very soft and tasty.

Accompany this dish with fries and a loaf of bread because you are going to want to dip the bread into the sauce.

Important information: no one will know that it's made with cauliflower, this makes it ideal to make it for your children if they have a hard time eating vegetables.

To make the special meatballs you need:

  • Minced beef: I have used 400 grams of minced beef
  • Cauliflower: a small cauliflower (approximately 1.2kg)
  • Red onion: 1 small red onion minced in the mincer
  • Egg: 1 egg size M
  • Bread crumbs: 35 grams of breadcrumbs
  • Ras el Hanout: 1/4 teaspoon
  • Fresh parsley: add minced fresh parsley to taste
  • Salt and pepper: add salt and pepper to taste
  • Flour: you need to put the meatballs through some flour before frying them
  • Sunflower oil: you need sunflower oil (or oil of your choice) to fry the meatballs

Ingredients you need to make the sauce

To make the sauce you need:

  • Chicken: two chicken thighs (whole or cut in half)
  • Tomatoes: use two ripe tomatoes grated
  • Red onion: one small red onion minced in the mincer
  • Cooked chickpeas: you need 3/4 cup of cooked chickpeas
  • Water: you need about 800 milliliters of water
  • Ras el Hanout: half a teaspoon of Ras al Hanout
  • Sweet paprika: half a teaspoon of sweet paprika
  • Garlic: two garlic cloves pressed
  • Olive oil: two tablespoons of olive oil, for cooking
  • Margarine: 20 grams of margarine or butter, for cooking
  • Salt: add salt to your liking

How to make this recipe for Chicken and Special Meatballs in Sauce

Trust the process to obtain an excellent result. You will see that this dish is even more delicious than it seems. It's so tasty that more than one person will want to repeat.

Start by boiling the cauliflower, when it's done, let it cool down.

Meanwhile, put the olive oil and butter in a pot to brown the chicken thighs. Brown them on both sides and add the chopped red onion, cover the pot and leave it for 2 minutes over medium heat. Then add the grated tomatoes, salt, pressed garlic, ras al hanout and sweet paprika, stir, put the lid on and leave it for another two minutes.

Add the water and chickpeas, cover and leave for 30 – 45 minutes.

Now make the “meatballs”. You have to remove the water from the cauliflower, put the cauliflower in a kitchen towel and squeeze hard to remove all the water you can.

Put the drained cauliflower in a bowl, also add all the ingredients from the ingredient list for the meatballs (except the flour) and mix. Make elongated shapes (like a croquette). When you have made the shape, pass it through the flour. Then fry them in hot oil until golden brown. If the oil is not hot enough, they will absorb quite a bit of oil.

Remove the chicken thighs from the sauce and set them aside. Add the meatballs to the sauce and leave for 5 to 8 minutes. Finally, put the chicken along with the meatballs and the sauce on a plate, garnish with parsley and…
