Croissants Filled with Pastry Cream Covered With Pink Icing (VIDEO)

If you have guests for a special breakfast or brunch, or you simply want to surprise your family with something new, you must prepare these Filled Croissants with pastry cream. They are so beautiful that it´s almost a shame to eat them.

These Pink Croissants Filled with Pastry Cream elevate the level of your table

You just have to look at them, they look like they came from a pastry shop in Paris. These butter croissants, filled with homemade pastry cream and decorated with a beautiful pink icing, will leave more than one person with their mouths open. And not only because they are so beautiful, they are also incredibly delicious!

A few weeks ago, I saw a video of some Filled Croissants with a pink icing. Of course, I couldn't get them out of my head until I saw croissants in the supermarket and decided it was time to make them.

I have used butter croissants from the store, homemade pastry cream and a beautiful pink icing made from powdered sugar, milk and pink food coloring. Making these beautiful pink croissants is no mystery.

Ingredients you need to make this recipe

To make these delicious croissants you need the following ingredients:

  • Butter croissants: you need 5 butter croissants

Ingredients you need to make the pastry cream

  • Milk: 500 milliliters milk
  • Sugar: 100 grams of white sugar
  • Egg yolks: you need 4 egg yolks
  • Vanilla sugar: a bag of vanilla sugar (8 grams)
  • Flour: to thicken the pastry cream you need 50 grams of flour

Ingredients you need to make the pink icing

  • Powdered sugar: you need 200 grams of powdered sugar to make the icing
  • Milk: some milk to make the icing
  • Pink coloring: use a very small amount of pink coloring until you get the desired color

How to make Croissants Filled with Pastry Cream

The pastry cream needs time to cool down, so I recommend starting with this step.

How to make the pastry cream to fill the croissants

Heat the milk and dissolve the vanilla sugar, when it is about to boil, turn off the heat.
Meanwhile, put the egg yolks in a bowl along with the white sugar, beat by hand for about 2-3 minutes until the sugar and yolks have mixed well and the mixture has gotten a lighter color. Now add about half the flour and beat by hand until incorporated. Then add the other half of the flour and incorporate it as well.

Gradually add half of the hot milk. When you have incorporated half of the milk, put it back in to the pot with the other half of the milk.
Turn the heat on to medium/low and keep stirring until you get a thick mixture. Put it into a bowl and put cling film on top touching the pastry cream so that a layer does not form when it cools down. Let it cool for 1 to 2 hours, if warm (not hot) you can put it in the refrigerator to cool sooner.

How to make pink icing

While the pastry cream cools down, put the icing on the croissants so that it can dry. Mix 200 grams of powdered sugar with a little bit of milk until you obtain a thick mixture. Add the milk very little by little because it goes from thick to liquid very quickly. Open the croissants before putting the icing on top, leaving one side closed so that when you put the filling in, it doesn't come out from every side.

How to fill the croissants

When the pastry cream has cooled down, put it into a pastry bag and fill the croissants. This is all!

If you don't have a pastry bag, you can put the pastry cream inside a plastic bag and cut a small piece in the bottom corner. There will be a small opening through which the pastry cream can come out. This way you will have a pastry bag without having to buy one. I've done it this way for a long time and it works great.
