How to make a Fluffy Orange Cake
Making a Fluffy Orange Cake has two parts: one is making the oranges in syrup and the other is making the batter for the cake.
How to make oranges in syrup
Making oranges in syrup is very simple. Wash the oranges very well since they are going to be used with the skin. Cut them into slices and remove the two sides of the edges.
In a small pot add the sugar and water, put it over medium heat and when the sugar has dissolved, add the orange slices. Leave it on medium heat for 15 minutes and turn off the heat.
How to make a Fluffy Orange Cake
In a large bowl add the sugar, vanilla sugar, eggs and a pinch of salt. Beat with a hand mixer on medium speed for 3 minutes. Add the flour, oil, natural orange juice and baking powder. Beat for a few more minutes to mix the ingredients well and obtain a batter with plenty of air.
How to assemble this cake
Preheat the oven to 160º.
Put a piece of baking paper on the base of the spring form, grease it with a little margarine and put only the orange slices on the base, save the syrup to put it on top of the cake once it is baked.
Baking the Orange Cake
Place the cake batter on top of the orange slices. Bake for about 25 minutes at 160º degrees. Keep in mind that each oven can vary a little so it is advisable to poke the cake from time to time with a stick to see if it´s done. If the stick comes out clean you can take it out of the oven.
Carefully remove the edge of the spring form because it will be very hot, place a dish on top of the cake and turn it over. Now you can put the leftover syrup on top of the oranges, if you see that the syrup has hardened a little, heat it for a few seconds so that it becomes liquid again. You want to put all the syrup on the cake, or just paint the orange ones with a brush to give them more shine. Personally, I really like to add all the syrup so that the orange cake absorbs it.

I don't like orange slices in syrup, can I make this recipe skipping the oranges in syrup step?
The good thing about this recipe is that it is very versatile, you can make just the cake without putting the oranges with syrup on top. For example, you can make just the syrup following the steps in the recipe without adding the sliced oranges. In this case, prepare the syrup while the cake is baking and once you take it out of the oven, put the syrup on top to have a spongy cake covered in syrup.
