Probably, if you are reading this, you are looking for a delicious recipe to make a fluffy cake. You can stop searching because I have created a recipe for you to make a delicious Extra Fluffy and Moist Walnut Cake. Between the extra fluffy and moist texture and the delicious baked walnuts and cinnamon flavor, I can say that it is one of my favorite cakes so far. Plus, it has the perfect sweetness and is not too much at all.

The walnuts are slightly crushed, but still have some chunks, which gives each bite of the cake a crunchy touch. I have also added raisins, I think raisins combined with walnuts is a perfect combination. If you are not a big fan of raisins, you can omit them.

With few ingredients and just a little bit of time, you can make this incredible Walnut Cake that will leave everyone who tries it wanting more.

Ingredients you need to make this Extra Fluffy Walnut Cake

To make this Walnut Cake you need the following ingredients:

  • Flour: you need 200 grams of all-purpose flour
  • Sugar: 200 grams of white sugar
  • Sunflower oil: 200 milliliters of sunflower oil or some neutral-flavored oil
  • Eggs: you need 4 eggs size M, ideally at room temperature
  • Walnuts: 125 grams of peeled walnuts, grind them for a few seconds until you obtain a fine texture, but still have small pieces (you can watch the video below to get an idea of the texture).
  • Raisins: 70 grams of raisins, soaked in hot water for about 10 minutes
  • Cinnamon: a teaspoon of cinnamon
  • Vanilla sugar: a bag of vanilla sugar (8 grams)
  • Baking powder: a bag of baking powder (10 grams)
  • Pinch of salt

You can decorate this cake with icing (mix 150 grams of icing sugar with water until you get a thick paste), or simply decorate it with a little bit of icing sugar, nuts, chocolate chips, caramel sauce, etc...

How to make this Extra Fluffy and Moist Walnut Cake

Before starting, preheat the oven to 170º.

Put the eggs, sugar and vanilla sugar in a bowl and beat it with a hand mixer on medium speed until you get a very airy mixture (about 3 minutes). Add the sunflower oil and incorporate it with the mixer. Once incorporated, add the flour little by little.

Add the chopped walnuts and cinnamon to the batter, use a spatula to mix it in. Then add the baking powder, incorporate it with the spatula and finally the raisins and a pinch of salt.

Prepare the spring pan, I used a 24 cm removable round spring pan. Put baking paper on the bottom and grease the mold with a little bit of margarine. Sprinkle it lightly with flour to prevent it from sticking.

Bake the cake at 170º for about 30 minutes. Depending on the oven, the cake may need more baking time. Prick the cake with a toothpick to see if it is done, if the toothpick comes out clean, your cake is done. On the other hand, if it comes out wet, leave it for a while longer.

Let the cake cool down and decorate it however you like.

You can use a different size spring pan, if it's smaller, you will have a higher cake. Keep in mind that the baking time will be longer. If you use a larger pan, the cake will be thinner and the baking time will probably be shorter. You can also use other types of molds. Use the toothpick trick to know when it's done.
