For me, Banana bread is more of a banana cake than a bread. But who am I to change the name, we will continue to call it banana bread.
- Brown sugar: it is less processed than white sugar, so it maintains its nutrients better. It also tastes different from white sugar and looks great on this banana bread. You can change it for white sugar if you would like to.
- Flour: you need all-purpose flour, normally you can find this ingredient in any pantry
- Bananas: You will need very ripe bananas, the riper they are, the more sweetness they will add and the better your banana bread will turn out.
- Cinnamon: A lot of Cinnamon is used to make this banana bread, besides having many health benefits, it gives it a very good taste. It will also give your home a delicious scent when you put the bread in the oven.
- Ground almonds: I have chosen to use ground almonds to benefit from its nutrients. If you do not have this ingredient, you can replace it with half a cup of flour.
- Extra virgin olive oil: extra virgin olive oil, I just love the touch of olive oil in this bread. If you prefer, you can replace it with the same amount of coconut oil.
- Walnuts: the walnuts give it a crunchy touch, although you can omit them if you want, and it will still be delicious.
- Vanilla aroma: for more delicious taste
- Baking powder: you can not miss the baking powder in this recipe
- Salt: half a teaspoon of salt to finish
Normally, banana bread has one or two eggs and often a dairy product such as butter. I have created this recipe because my son is allergic to milk and eggs. He has not been able to drink milk since he was little, but recently he was also diagnosed with an egg allergy. I have been forced to create a recipe for banana bread without eggs.
I have managed to create a delicious recipe without eggs, it's moist inside and has the perfect sweetness. It is ideal for breakfast, I prepare it in the afternoon to have it ready for breakfast, but unfortunately normally it does not make to the next morning, it disappears throughout the afternoon/evening!!

To make the banana bread, prepare all the ingredients before starting, since all you have to do is add the following ingredients in a bowl.

How to prepare this delicious Banana Bread
It is as simple as adding ingredients to a bowl. But before you start, turn on the oven to 180 degrees Celsius.
Now, mash the ripe bananas well in a bowl with a fork. Add the olive oil and mix. Once this is done, all you have to do is add everything else one by one in the following order:
If the flour has lumps, it should be sifted.
Pour the dough into the mold previously greased with a little olive oil... and let the magic begin! Bake for about 35 minutes. Keep in mind that each oven is different, the best way to know if it is ready is to prick a stick, if there is no liquid dough left on the stick, the banana bread loaf is ready. If you see that your bread is at risk of burning on the top, but inside it is still not done, you can cover it with aluminum foil.
I know it's very difficult, but before cutting it, let it cool down for an hour for a better texture (which of course I didn't do, after 15 minutes we were already enjoying the freshly made warm banana bread).
With what to serve it
Enjoy it with a coffee with milk and a bowl of freshly cut fruit. It's easy to take anywhere like the beach or to the park.
