Today, I am sharing these delicious Lemon Cookies. I made them over the weekend and I thought it is worth sharing them with all of you because they are delicious. They have a delicious lemon aroma, they are crispy on the outside and very soft on the inside. They have the perfect sweetness, they are not sweet, I think you are going to love them.

In addition to being delicious, they are very pretty. You can serve them with tea or coffee for lunch, snack, and even for breakfast. These delicious cookies will delight both adults and children.

Ingredients you need to make Lemon Cookies

To make these cookies, you need the following ingredients:

  • 350 grams of flour
  • 100 grams sugar
  • 1 medium lemon, of which you need the zest and lemon juice from one half (10 milliliters)
  • 2 medium eggs
  • 100 gramos margarina derretida
  • 8 grams of baking powder
  • 1 bag of vanilla sugar
  • 1 pinch salt
  • icing sugar (before baking the cookies, you get them through icing sugar)

Instructions

Grate the lemon peel (only the yellow part, the white part is bitter) and mix it for about 3 minutes with the sugar, pressing with a spatula. Add the eggs, vanilla sugar and a pinch of salt, stir well and add the melted margarine.

Add half of the flour and the baking powder (both sifted ) and incorporate it well with the help of a spatula, then add the other half of the flour and knead by hand. When you have a firm dough, add the lemon juice and knead again.

Put the dough in cling film and put it in the refrigerator for about 45 minutes so that you can handle the dough well when making the cookies.

Preheat the oven to 180º.

Take the dough out of the refrigerator, make balls, roll them in powdered sugar and put them on a baking tray on baking paper. Flatten them lightly in the center with a spoon or your finger. Leave space between them because they will grow quite a bit.

Bake them for about 20 minutes

Let them cool on a rack.
