After suddenly disappearing in the month of March, I'm back. And today with a delicious Cake with Pink Icing to celebrate the arrival of our daughter. This has been the reason why I have been missing. Honestly, I had planned to continue uploading the weekly recipes... But the fatigue during the last weeks of pregnancy knocked me out, so I decided to rest before the birth of our beautiful daughter. Meanwhile, we have enjoyed more than a month with her now. And it's time to continue sharing my passion for delicious food and upload all the amazing recipes I'm making.
A different cake: Fluffy Cake with Pink Icing with Rose Water
To celebrate the birth of our daughter, I've let my imagination run wild a little. I have created a fresh and very simple cake, with a very beautiful decoration and a different flavor. I added a little bit of rose water to the icing to give it a special touch. I have used rose petals to decorate.
How to make this Fluffy Cake with Pink Icing
This Cake is prepared in no time, so it is good to have this recipe on hand for when you need to make something quick and easy.
Ingredients you need to make the Sponge Cake
The ingredients you need to make this Fluffy Cake without those detailed below. You can even make the cake without the icing and simply add powdered sugar, for example, to decorate.
- 4 large eggs
- 260 grams of sugar
- pinch of salt
- some vanilla aroma drops
- 250 milliliters of milk (you can make it with plant-based milk)
- 250 milliliters of sunflower oil
- 400 grams of flour
- 1 tablespoon of lemon juice
- 2 bags of baking powder (10 grams each bag)
Ingredients you need to make the Pink Icing with Rose Water
To make the pink icing you need:
- 200 grams of powdered sugar
- 1 tablespoon sunflower oil
- 15 milliliters of rose water
- pink coloring
- milk
- rose petals
Instructions to make the Cake
Preheat the oven to 170º.
In a bowl, beat the eggs, sugar, a pinch of salt and a few drops of vanilla aroma with a whisk for about 3 minutes.
Next, add all the other ingredients and mix with a spatula. Mix it just enough so that everything is incorporated, do not overbeat it.
Cover the baking pan you are going to use with baking paper. I have used a 35x25 pan. Pour the mixture inside and bake at 170º for 30-40 minutes. To check if it is done, when half an hour has passed, prick the cake with a stick to check it. If the stick comes out clean, remove it from the oven and let it cool down before putting the pink icing on. If there some batter on the stick, leave it until the stick comes out clean.
Instructions for making Pink Icing with Rose Water
Mix the powdered sugar, sunflower oil, rose water and the tip of a knife of pink food coloring. Add milk little by little until it becomes a thick paste.
Pour the icing little by little over the cake once it has cooled down.
You can decorate it with rose petals.
