Ingredients you need to make the best Homemade Tomato Sauce
To make a tomato sauce, you need few ingredients.
- Tomatoes: choose some good ripe tomatoes, the better the tomatoes the better the sauce will be
- Salt: give it some flavor with table salt or Himalayan pink salt
- Pepper: add pepper to taste
- Sugar: the tomato sauce needs some sugar, depending on the acidity that the tomatoes have, you will use more or less
- Concentrated tomato paste: I always use concentrated tomato to give depth of flavor
- Basil: In my opinion, everything is better with basil. Including this tomato sauce. Preferably use fresh basil
- Olive oil: and last but not least, olive oil, preferably extra virgin.
Kitchen tools you need to make this homemade tomato sauce
You don't need much to make a delicious sauce.
- Pans: You need two pots, one large one, to put the tomatoes in for a short boil, to peel them. And another pot to make the tomato sauce
- Potato press or blender: Depending on the consistency you want for your sauce, you can mash the tomatoes with a potato press to get a chunky sauce. Or you can put the sauce in the blender to have a sauce without tomato chunks.
Choosing the tomatoes for the sauce
Any tomato that tastes good can be used to make tomato sauce, it's that simple. When I buy tomatoes to make tomato sauce at home, I look for tomatoes that look good, are red and ripe. Avoid tomatoes that still need to ripen.
Buying ripe tomatoes is not the only thing that matters. For example, it is not worth buying tomatoes at €5 per kilo. When buying tomatoes, I buy the best from the cheapest ones. In this recipe I have used bush tomatoes, they were the best looking and the cheapest.
How to make the best tomato sauce
Nobody likes a tomato sauce that has bits of skin on it, so you will have to peel the tomatoes. It sounds like a lot of work, but it's not. Bring a pot of water to a boil, in which you can fit the tomatoes. Put the tomatoes in for 1 minute and take them out. Most people, when removing the tomatoes from the water, place them in a large bowl of cold water with ice cubes. This process is done to stop the cooking process and so that the tomatoes can be peeled without burning your hands. However, I skip that step, I let the tomatoes cool down a bit while I wash some dishes or hang the clothes.
Peel the tomatoes and cut them into cubes. Now, depending on whether you like a chunky or non-chunky sauce, we do one or the other.
Sauce with chunks: put a little olive oil in the pot and add the tomatoes. Add salt, sugar and pepper to taste and cover. Leave it for about 20 minutes and add the basil and concentrated tomato. Now mash the tomatoes with a potato press and leave for another 10 minutes.
Sauce without chunks: for a sauce without chunks, put the pieces of tomato into the blender. Beat for a few seconds, don't beat too long. Put a little olive oil in the pot and add the tomatoes, salt, sugar and pepper. Leave for about 20 minutes with the lid closed. Once this time has passed, add the basil and concentrated tomato and leave for another 10 minutes.
Now you can use the tomato sauce to prepare a delicious pizza carrée, a Bolognese sauce or whatever you feel like.
