We all know how nutritious liver is, although it can be boring if you don't know how to prepare it. And why not give it a different touch and prepare it in a sandwich format? It's exactly what I've done. I have prepared some breads that are ideal to fill, they are soft and have a delicious flavor. I'm sure you'll make them more than once once you've tried them. And if you're not a big fan of liver, that's okay. Fill them with whatever you like the most!
Below I share how to make these breads, ideal for making sandwiches, and also how to make chicken liver in an easy and delicious way.
How to make these Homemade Breads Stuffed with Chicken Liver
Below I share how to make the ideal breads to fill and how to make chicken liver so that it tastes delicious. With this recipe you make 8 breads, you can easily freeze them. How to make easily fillable breads
With this recipe you make 8 loaves, you can easily freeze them and take them out when you are going to use them.
Ingredients you need to make the breads
- 200 grams of semolina
- 1 tablespoon sugar
- 1 tablespoon baker's yeast
- 400 milliliters warm water
- 2 tablespoons olive oil
- aprox. 450 grams flour
- 10 grams of salt
- Extra flour and semolina
How to make easily fillable breads
In a bowl add the semolina (pass it through a sieve), sugar and yeast, mix and add the water. Cover it with plastic wrap and let it rest for about 20 minutes.
Once 20 minutes have passed, stir the mixture and add two tablespoons of olive oil. Add the flour little by little (with a sift) and mix with a spatula until you have to continue by hand. Knead for about 10 minutes, the dough will be somewhat sticky but not to the point that you cannot handle the dough. If it's very sticky, add more flour.
Put the dough in a bowl greased with olive oil and cover it with plastic wrap. Let it rest for 1 to 1.5 hours, or until it has doubled in size.
Take the dough out of the bowl and place it on a floured surface. Divide it into 4 parts. Cover a tray with a thin layer of semolina, form the 4 parts of dough into balls and put them on the tray covered with semolina. Make sure all the dough balls have semolina on both sides.
With a rolling pin, flatten each ball of dough and form a circle, the dough must be thin. Cut it in half and put them on a baking tray on baking paper. I have used 2 trays, each tray fits 4 loaves. Cover them with a dry kitchen towel for approximately 30 minutes.
Bake them at 200º for about 6 minutes, you will see that they have puffed and are beginning to take on a light golden color, turn them over. Bake for 5 to 6 more minutes, or until golden brown.
Take them out of the oven and let them cool on a rack.
Meanwhile make the liver or any filling to your liking.
How to make delicious chicken liver (kebda mchermla)
Of all the livers, chicken liver is the one I like the most (although my family doesn't entirely agree with me). It has a soft texture and prepared in the correct way they are very delicious.
Ingredients you need to make the liver
- Approximately 900 grams of chicken liver
- Olive oil
- Salt and pepper to taste
- 1 teaspoon of caraway (it is a spice that I love, I honestly don't know if they sell it in supermarkets, we buy them at the Arab butcher shop, there you not only find very delicious meat but they usually sell many types of spices and other products at very good price).
- 2 garlic cloves
- 1 tablespoon concentrated tomato paste
- a splash of water
- 2 tablespoons of white vinegar
- some sprigs of fresh parsley
- 4 potatoes to make French fries (optional)
How to make the liver
I remove all the white parts of the liver, I think its not necessary but I prefer to remove it. Cut it into pieces and heat a splash of olive oil in a frying pan. Add the liver, salt and pepper to taste and the teaspoon of caraway. Stir and add the pressed garlic. Put the lid on and stir occasionally. Meanwhile you can make the fries.
When the liver is cooked, add a tablespoon of tomato concentrate and a splash of water, stir, put the lid back on and leave it for about 5 minutes over medium heat.
Finally, add two tablespoons of white vinegar and remove it from the heat.
Add the French fries and fresh chopped parsley.

You can add sauces to taste such as harissa or as I have done, algerian sauce.
