One of the things I love to do in my daily life is experiment with dough, I love making different types of bread. For some reason, it seems incredible to me how by combining flour with water and a few other ingredients, you can get incredibly delicious and varied results. Making Homemade Pasta also includes making a dough. Although this dough is quite different from bread dough, since making pasta you simply mix flour with eggs.
I have searched a lot on how to make the perfect Homemade Pasta. Despite having read that to make pasta you need type 00 flour, I have had very good results using all-purpose flour. Even though I had good results, I continued researching and read on several sites that the result is better using only fine semolina. Since fine semolina is something that I (almost) always in my pantry, I decided to create my own Homemade Pasta recipe and try it with half of semolina and the other half with all-purpose flour. de uso común. The result was amazing and that's why I have decided to share this recipe.

Ingredients you need to make this Homemade Pasta recipe
To make your own pasta you need the following ingredients:
- Eggs: you need 4 eggs size L
- All-purpose flour: you need 200 grams of all-purpose flour
- Fine semolina: you need 200 grams of fine semolina + a little extra to sprinkle the dough sheets. If you don't any semolina at home, don't worry, replace it with the same amount of all-purpose flour, although I recommend you to use semolina.
- Salt: add half a teaspoon of salt

- Pasta machine: I have had good results making pasta without having a pasta machine. Although having one makes your life a lot easier, and they are not that expensive! You can get a good machine without spending a fortune
- Kitchen scale: you need a kitchen scale to measure the flour
- Fork: you will need a fork to beat the eggs
- Roller: you need a roller to flatten the dough before putting it through the machine
How to calculate the amount of dough per person
It's very simple to calculate how much pasta dough you have to make. I follow the rule of 1 egg + 100 grams of flour per person. I'll give you an example:
If you want to make pasta for 5 people, you'll need 5 eggs and 500 grams of flour.
You can use 500 grams of all-purpose flour or if you are also going to use semolina, do half-half. Use 250 grams of all-purpose flour and 250 grams of semolina.
Like this:
Pasta for 1 person = 1 egg + 100 grams of all-purpose flour or 1 egg + 50 grams of all-purpose flour + 50 grams of semolina
Pasta for 5 people= 5 eggs + 500 grams of all-purpose flour or 5 eggs + 250 grams of all-purpose flour + 250 grams of semolina
It's very easy to calculate.
How to make Homemade Pasta
Now that you know what ingredients and utensils you need, you are ready to make your own pasta. This recipe is to make pasta for four people, or three people with a very good appetite.
How to make pasta dough
Mix the two flours and make a volcano on the counter as in the image below. Put the four eggs in the center along with the salt.
Take a fork and beat the eggs and gradually incorporate the flour.
There will come a point where you will no longer be able to continue mixing the eggs with the flour using the fork, you will have to continue by hand. The kneading process takes approximately 10 minutes. It's a totally different dough from any bread dough. The dough for making fresh pasta feels quite hard, however, if you feel that the dough is too dry, wet your hands from time to time to incorporate a little moisture. The dough should look more or less like the image below. Cover it with plastic wrap or put it in a bag and seal it tightly. It has to rest for approximately half an hour.
Make the Homemade Pasta
Now it's time to choose how you want your pasta, you can make noodles, sheets to make lasagna or for example spaghetti as I have done for this fresh pasta recipe.
Take the dough and divide it into 8 pieces. Sprinkle your counter with semolina and with the roller make a long sheet of dough to pass through the pasta machine. Sprinkle the sheet with semolina on both sides and run it through the machine twice to make thin sheets. Then pass it through the compartment to make the shape, for example to make spaghetti. Once the spaghetti is made, hang it so that it dries a little and doesn't stick. You can decide the length of the sheets yourself, we are not going to get complicated with measurements. The result is going to be incredible, despite being longer or shorter.
Repeat the process with the other pieces of dough.
If you make noodles, as they are thicker, you can sprinkle them with semolina and leave them on the counter. They don't usually stick together like spaghetti does.
Boil the pasta
Bring water to a boil with a teaspoon of salt to boil your pasta you have just made. Before boiling the spaghetti, I sprinkle it with semolina and separate it well so that it doesn't stick together. Boil your pasta for a few minutes, I boiled the spaghetti for about 4 minutes. Since the pasta is homemade, there is no certainty about the cooking time. Taste the pasta from time to time until its al dente.

But don't overdo it because after resting, the dough softens a little too.
The dough is sticky, what do I do?
The dough does not have to be sticky, if you see that the dough sticks to the counter and/or your hands, add a little bit of flour or semolina. You have to have a consistent and non-sticky dough.
Can I make this recipe with M size eggs?
