In Holland, they have the habit of eating something light at midday, like a sandwich with, for example, Egg Salad, a salad or soup, and at night (what here in Spain we would call snack time) around 5:00 p.m. - 6:00 p.m. they have a hot and elaborate dinner.

If you don't know what an Egg Salad is, it is not a regular lettuce, tomato and cucumber salad, but rather it is a mixture of hard-boiled eggs, mayonnaise, mustard, very finely chopped onion and a few other ingredients that you probably have at home. .   • Onion: half onion chopped very finely
  • Mayonnaise: You need 3/4 cup of mayonnaise, if you can prepare it at home, the flavor is much better. Make here for the recipe
  • Mustard: a tablespoon of mustard
  • Fresh parsley: you can use fresh parsley to decorate, although it also gives it a very nice and fresh flavor, this step is optional
  • Salt and black pepper: have some salt and black pepper on hand to season to your liking

Have the hard-boiled eggs already made, I like them boiled for 7 minutes if they come from the refrigerator and if they are at room temperature 6 minutes.

Separate the egg whites from the yolks. Put the yolks in the bowl and mash them with a fork. Next add the mayonnaise, mustard, chopped onion, salt and pepper and mix well.

Finally, cut the egg white into pieces and add it to the sauce you just made. Mix it and decorate with parsley.
