This soup is made with, guess… yes! Red peppers! Its main ingredient is red bell pepper, but it also has some tomatoes, paprika powder and a touch of cream. This exquisite Creamy Red Pepper Soup is prepared in just 45 minutes.
It is not very common to eat a red pepper soup, however, it is an ideal soup as a first course for important lunches or dinners. No one will believe that you have prepared it in just 45 minutes. Garnish each bowl of soup with a splash of cooking cream or a tablespoon of sour cream, some chopped chives or parsley, and even some croutons. It will look like a soup from a fancy restaurant.
I first tried red pepper soup thanks to one of my grandmothers, she used to prepare it for family events when I was little. I've never been able to forget about that soup. This recipe came up one day when I came back from the supermarket, and I found myself with red bell peppers that I just bought, and red bell peppers that I still had in the fridge. In order not to accumulate so many red peppers, I decided to put the red peppers together with some other ingredients, and this was the result. A delicious soup that reminds me of my childhood.
Ingredients you need to make this recipe
To prepare this recipe you need very few ingredients, below I share with you what I have used:
- Red bell peppers: obviously, you need red bell peppers to make this exquisite Creamy Red Pepper Soup. You need 4 large red bell peppers
- Tomatoes: I used two medium tomatoes, there is no need to peel them as at the end of this recipe you will be straining the soup to remove the seeds and skins
- Extra virgin olive oil: you need two tablespoons of extra virgin olive oil to fry the onion
- Garlic: you need two garlic cloves to give the soup an even richer flavor
- Onion: you need 1 large onion or two small ones
- Sweet paprika: use one teaspoon of sweet paprika
- Hot paprika: use half a teaspoon of hot paprika, if you don´t want the soup to have a slight spicy taste, or if you are going to serve it to small children, skip this step
- Cooking cream: you need 1/4 cup of cooking cream to give it extra creaminess and smoothness, you can skip this step or replace it with vegetable cream if you want this soup to be vegan
- Chive: it is optional to garnish the soup with fresh chives, I love the taste of chives, and it gives a delicious flavor to the soup. You can also decorate it with a little bit of fresh parsley, or you can decide not to decorate it at all.
- Black pepper: you need 1/4 teaspoon of black pepper to season this soup
- Salt: add salt to your liking
Kitchen tools you need to make this exquisite Creamy Red Pepper Soup
Below, you can find all the kitchen utensils I have used to make this exquisite soup.
- Cutting board: you need a cutting board to cut vegetables, the peppers, tomatoes and onion.
- Knife: you will use it to cut the vegetables and peel the garlic
- Pot: you need a medium pot to make the soup
- Strainer: use a strainer to remove the seeds from the tomato and the skin from the red pepper and tomato for a smooth soup
- Wooden spoon: you need a wooden spoon to stir
- Blender: to blend the soup I have used a hand blender, you could use another type of blender if you prefer
How to make this delicious soup
Despite it being an exquisite soup that looks like it comes from a restaurant, it's very easy to prepare.
Put two tablespoons of extra virgin olive oil, or any other oil you use for cooking, in a pot. Cut the onion, put it in the pot and cook it over medium heat until soft, about 5 minutes. Next, add the two whole garlic cloves, the red peppers and the tomatoes cut into pieces. Leave it for about 5 more minutes over medium heat, stirring from time to time so that it does not burn.
Add water just enough to cover the peppers, don't add too much because you don't want a very watery soup. Leave it on medium heat for 25 minutes. Once this time has passed, the peppers will be soft.
Blend the soup with a hand blender, or if you prefer, you can blend it in a blender. Pass it through a strainer to remove the seeds and skin of the tomato and red pepper.
Finally, if you add the cream and leave it for another minute over medium heat. Serve it and decorate it as you like.

In this recipe I have used cream for cooking, but you can easily make this recipe vegan or without dairy products, substituting the cream for a vegetable cream, coconut milk or you can even not add any type of cream, the result will be great too.
The soup is very liquid, what do I do?
If you added more water than you should have, don't worry. Leave the soup for a few more minutes over medium heat without a lid so that the water can evaporate.
The soup's consistency is too thick for my taste, what do I do?
This is easy to fix, add a little more water or cream until you get the desired consistency.
