Loubia, Loubia Algérienne, Algerian style beans are prepared in less than an hour. It has white beans, spices and tomato. This Algerian recipe is nutritious and soooo delicious. It is served with a good splash of extra virgin olive oil and a splash of vinegar. And of course, you must eat it with a good bread.
Make Loubia the Algerian style
You have to try this Algerian Loubia recipe. It's so simple, you need few ingredients and it's super nutritious. This is the quick version of making Loubia, ideal for a day when you have little time to spend in the kitchen. It´s usually made with dried white beans, they are soaked for 12-24 hours and have to be cooking for several hours. If you have time, you can make this recipe with dried white beans in the same way (the flavor will be even better after cooking for so long). Simply add more water and leave it for about 2 and a half hours over medium heat. This recipe that I am sharing today uses jarred beans so that you save a few hours of cooking, which makes this Algerian recipe ideal to make in a moment.
What makes this recipe so delicious are the spices like cumin, sweet paprika, turmeric, ginger and a little hot paprika (optional). Ingredients such as garlic and fresh tomato also add a lot of flavor to this delicious dish.
Although each family makes Algerian Loubia in their own way, there are not many variations. Some recipes call for beef or lamb, I prefer to make them without meat. There are also people who prepare this recipe by making it extra spicy by adding Harissa (hot chili paste).
There are liquid and thicker versions, you can make this Algerian beans recipe however you like. If you like it more liquid, follow the recipe as is because at home we eat it as a soup. If you prefer beans with less sauce, remove a little bit of water to get a thicker Algerian bean dish.
Ingredients needed to make Algerian Loubia
To make this Algerian Loubia recipe, you don't need many ingredients. Below is the list of ingredients that I have used to make this recipe:
- White beans: You need two cans of white beans, each weighing 400 grams drained (in total you need 800 grams of white beans)
- Tomatoes: you need 4 mature tomates, grated
- Garlic: two garlic cloves pressed
- Onion: you need a minced onion
- Carrot: a big carrot grated
- Ground cumin: 1 teaspoon of ground cumin
- Ground ginger: you need 1/2 teaspoon of ground ginger
- Turmeric: 1/2 teaspoon turmeric
- Sweet paprika: one and a half tablespoon of sweet paprika
- Black pepper: 1/4 teaspoon black pepper
- Hot paprika: add 1/4 teaspoon if you like it spicy (optional)
- Concentrated tomato paste: you need 1 and a half tablespoons of tomato paste
- Water: you need 1,5 liters of water
- Olive oil: use olive oil to cook
- Salt: add salt to your liking
If you notice that the tomatoes you have used are somewhat acidic, add a teaspoon of white sugar to balance the flavor.
How to make Loubia, Algerian Beans in Tomato Sauce
Making Algerian Beans has no mystery other than adding ingredients to a pot.
Heat a splash of olive oil in a pot and soften the onion. Add the chopped carrot, pressed garlic and spices, stir well and add the tomato paste,, leave it over medium heat for 1-2 minutes. Add the grated tomato and beans, stir and leave it for about 5 minutes over medium heat.
Add 1.5 liters of water, put the lid on and leave it on medium heat for about 40 minutes.
Serve it with a drizzle of extra virgin olive oil and vinegar. And don't forget about the bread!
